πŸ₯˜ Recipe for Lamb Tajine with Candied Vegetables

πŸ›’ Ingredients (for 4 people):

  • 800 g lamb (neck, shoulder or leg cut into pieces)
  • 2 chopped onions
  • 3 carrots cut into sticks
  • 2 turnips, cut into quarters
  • 1 zucchini cut into slices
  • 100 g of raisins
  • 100 g dried apricots
  • 2 tbsp honey
  • 1 tbsp ras-el-hanout
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 2 cloves garlic, chopped
  • 500 ml of chicken stock
  • 3 tbsp olive oil
  • Salt, pepper
  • A few flaked almonds and fresh coriander for the finishing touch

1️- Brown the lamb in a casserole dish with olive oil until golden brown. Set aside.
2-In the same casserole dish, sweat the onions and garlic. Add the spices, mix and let infuse for a few minutes.
3- Put the lamb back in , add the carrots and turnips, then pour in the broth. Cover and simmer over low heat for 1 hour .
4- Add the zucchini, dried fruits and honey. Continue cooking for 30 minutes over low heat.
5- Adjust the seasoning, sprinkle with toasted flaked almonds and chopped coriander.
