π₯ Recipe for Lamb Tajine with Candied Vegetables
π Ingredients (for 4 people):
- 800 g lamb (neck, shoulder or leg cut into pieces)
- 2 chopped onions
- 3 carrots cut into sticks
- 2 turnips, cut into quarters
- 1 zucchini cut into slices
- 100 g of raisins
- 100 g dried apricots
- 2 tbsp honey
- 1 tbsp ras-el-hanout
- 1 tsp cinnamon
- 1 tsp cumin
- 2 cloves garlic, chopped
- 500 ml of chicken stock
- 3 tbsp olive oil
- Salt, pepper
- A few flaked almonds and fresh coriander for the finishing touch
π©βπ³ Preparation:
1οΈ- Brown the lamb in a casserole dish with olive oil until golden brown. Set aside.
2-In the same casserole dish, sweat the onions and garlic. Add the spices, mix and let infuse for a few minutes.
3- Put the lamb back in , add the carrots and turnips, then pour in the broth. Cover and simmer over low heat for 1 hour .
4- Add the zucchini, dried fruits and honey. Continue cooking for 30 minutes over low heat.
5- Adjust the seasoning, sprinkle with toasted flaked almonds and chopped coriander.
β¨ Serve hot with semolina or Moroccan bread for a gourmet journey to the heart of the Orient!
